Some are experts in other feields, like historians and photographers. What they all share is a demonstrable passion for chocolate.\u00a0It is a close-knit organisation that take itself &#8211; and chocolate &#8211; very seriously.<br \/>\nThey gather for tasting every other month, each time they focus on a different theme, such as chocolates flavored with tea,\u00a0fruit and alcohol pralines, etc.<\/p>\n<p>&nbsp;<\/p>\n<p>A rising force in the chocolate world is <strong>George Bernardini<\/strong>, who publishes<strong> <a href=\"http:\/\/www.thechocolatetester.com\/\" target=\"_blank\" rel=\"noopener\">The Chocolate Tester &#8211; The Reference Standard<\/a><\/strong>.<\/p>\n<p>Bernardini writes personal reviews of over 4,000 chocolates, made by 550 brands from over 70 countries.<br \/>\nHe ranks chocolatiers from all over the world, awarding them with \u201cCocoa Pods\u201d<br \/>\n&#8211; \u00a0from 1 to 6 Pods, like Michelin Guide awards \u2018Stars\u2019 restaurants internationally.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>The \u201cEurovision\u201d Contest of The Chocolate World <\/strong><\/h2>\n<p><strong>A major event for the chocolate business is The<\/strong>\u00a0<strong><a href=\"http:\/\/www.thechocolateshow.co.uk\/\" target=\"_blank\" rel=\"noopener\">International Chocolate Awards<\/a>.<\/strong><br \/>\nThe organisation is based in London, where the annual\u00a0<strong><em>Chocolate Show<\/em><\/strong> takes place every autumn.<\/p>\n<p>The competition has started taking place also in France, Peru, and Japan, as more and more people gain knowledge in the art of chocolate, and the significance of <a href=\"https:\/\/www.ikachocolate.com\/travel\/chcolate-tourism-should-be-about-terroir\/\">terroir<\/a>.<\/p>\n<p>The organisation Founder and\u00a0Judging Director is\u00a0<a href=\"http:\/\/martinchristy.com\/\" target=\"_blank\" rel=\"noopener\">Martin Christy<\/a>, also Founder and Editor of fine chocolate review website\u00a0Seventy%. His purpose and life&#8217;s work is to\u00a0raise awareness of the quality and sourcing of chocolate, being\u00a0&#8220;a complex, ancient, beneficial and spiritual food&#8221;.<\/p>\n<p>Christy was joined by\u00a0Dr. Maricel E. Presilla,\u00a0a culinary historian, author and chef specializing in the cuisines of Latin America and Spain. Her book\u00a0<em>The New Taste of Chocolate: A Cultural and Natural History of Cacao with Recipes<\/em>\u00a0is treasured by all leading chocolatiers.<\/p>\n<p>Monica Meschini, the celebrated Italian\u00a0chocolate\/tea taster and Sommelier, completes the <a href=\"http:\/\/www.internationalchocolateawards.com\/about\/main-partners\/\" target=\"_blank\" rel=\"noopener\">founding trio<\/a> of the Internbational Chocolate Awards.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>What judges are mainly looking for is subtlety of taste and textures.<\/strong><\/p>\n<p>The Grand Jury members taste the competing chocolates anonymously. They are served pralines in small cups, with the description of the sample.<\/p>\n<p>They do a lot of tasting in a very short time, of hundreds of chocolates from all over the world.<\/p>\n<p>According to the press, there were more than 1,000 products registered for the event, including more than 650 chocolate bars.<br \/>\nThey won&#8217;t get an ounce of pity from us, though.<\/p>\n<p>After they taste, they give a score from 1 to 5 in <strong>four areas<\/strong>:<\/p>\n<ol>\n<li>Quality of the ingredients<\/li>\n<li>Preparation and technique<\/li>\n<li>Creativity (and innovation)<\/li>\n<li>Taste.<\/li>\n<\/ol>\n<p>Judges give positive and negative comments considering those categories. Too perfect to be hand-made?<br \/>\nInvestigate further &#8211; is the decoration elegant, clean, and does it dispense some clues about the filling?<br \/>\nCan you see the lightness of the chocolate artist\u2019s hand on this praline?<\/p>\n<p>Before taking it into your mouth, stop over at the tip of your nose: bring the chocolate close to your nose, and smell it (yes, just like you start with wine). Quality chocolate have hints of flavours, that originate in the ground where the cocoa was grown (like fruit, and even smoky Papua New Guinea dried lava), and from the manufacturing process.<\/p>\n<p>Finally, place the chocolate on the tongue, and let it melt slowly, naturally. While it melts on your tongue, try to recognize all the flavours you feel.<br \/>\nSearch for flavour nuances.<\/p>\n<h2><strong>Pralines Tasting<\/strong><\/h2>\n<p>When tasting a chocolate praline, take only half a bite and look at the filling of the half that\u2019s left on your finger.<br \/>\nLook at the layers, the textures of the filling.<br \/>\nPay special attention to the thickness of the praline\u2019s coating layer. If it\u2019s slender, you can be sure you are tasting a superior quality praline.<\/p>\n<p>Between different bites, it\u2019s good to drink some water and even eat something neutral like bread, to refresh your taste buds (like some people do when they eat Sushi).<\/p>\n<p>Low quality industrial chocolate and pralines will have familiar candy-like chemical flavors.
